- 1 bell pepper, diced
- 1 red onion, diced
- 1 zucchini, sliced
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Wooden or metal skewers
- Ranch dressing
- Fresh herbs (parsley and dill), chopped
Instructions
- Preheat the grill.
- In a bowl, combine cubed chicken, diced bell peppers, red onion, and zucchini.
- Drizzle with olive oil and season with salt and pepper.
- Thread chicken and veggies onto skewers.
- Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.
- Meanwhile, prepare the herby ranch dressing by mixing ranch dressing with fresh herbs.
- Serve the skewers over a bed of greens and drizzle with herby ranch dressing.
Notes
For the best flavor, marinate the chicken before skewering and soak wooden skewers in water for at least 30 minutes before grilling.
