Savory muffins made with ground beef and sweet carrots, perfect for breakfast, lunch, or a snack.

Ingredients

  • 1 cup Ground Beef
  • 1 cup Shredded Carrots
  • 1 cup Whole Wheat Flour
  • 1/2 cup Rolled Oats
  • 1/2 cup Beef Broth
  • 1 Egg
  • 1 tablespoon Olive Oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the ground beef, shredded carrots, whole wheat flour, rolled oats, beef broth, egg, and olive oil until well integrated in a large bowl.
  3. Grease the muffin tin and fill each cup halfway with the mixture.
  4. Bake for 20-25 minutes until golden and firm to the touch.
  5. Cool in the tin for a few moments and then transfer to a wire rack.
  6. Allow to cool completely before serving.

Notes

Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 4 days.
