  • 1 cup Fresh Chopped Tomatoes
  • 1/2 cup Diced Red Onion
  • 1/4 cup Fresh Cilantro Leaves
  • Jalapeรฑo Slices or Chopped Green Chili (optional)
  • 1 cup Lettuce or Spinach (optional)
  • 1 cup Shredded Cheese (Monterey Jack or Cheddar)
  • 1 cup Sliced Avocado or Guacamole
  • 1 cup Cooked Rice
  • 4 Tortillas

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lime juice, garlic, chipotle chili powder, smoked paprika, cumin, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  2. Grill the chicken: Heat the grill over medium-high heat, then place the chicken on it. Cook for 6-7 minutes per side until golden brown or until the internal temperature reaches 165ยฐF. Let rest for 5 minutes, then slice.
  3. Make the chipotle ranch dressing: Blend ranch dressing, chipotle peppers (if using), lime juice, garlic powder, and salt until smooth.
  4. Prepare the tortillas: Warm the tortillas in a skillet or microwave.
  5. Assemble the burrito: On each tortilla, layer rice, sliced chicken, tomatoes, onion, cilantro, cheese, lettuce, avocado, and drizzle with chipotle ranch dressing.
