A delightful twist on classic pizza packed into a sandwich with gooey mozzarella and fresh arugula.

Ingredients

  • 2 slices of bread
  • 1 cup fresh arugula
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup pizza sauce
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and drizzle it with olive oil.
  2. Spread pizza sauce on one side of each slice of bread.
  3. Layer mozzarella cheese and arugula on top of the sauce on one slice.
  4. Place the other slice of bread on top, sauce side down.
  5. Grill the sandwich in the skillet for 3-4 minutes on each side until golden brown and the cheese is melted.
  6. Remove from the skillet, slice, and serve warm.

Notes

Serve with a side salad or veggie sticks. Best enjoyed warm right after grilling.
