Ingredients

- 2 slices of bread
- 1 cup fresh arugula
- 1 cup mozzarella cheese, shredded
- 1/4 cup pizza sauce
- Olive oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and drizzle it with olive oil.
- Spread pizza sauce on one side of each slice of bread.
- Layer mozzarella cheese and arugula on top of the sauce on one slice.
- Place the other slice of bread on top, sauce side down.
- Grill the sandwich in the skillet for 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet, slice, and serve warm.
Notes
Serve with a side salad or veggie sticks. Best enjoyed warm right after grilling.
