- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup sweetener of choice (erythritol, stevia, etc.)
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free strawberry jam
- 1/4 cup powdered sweetener (for icing)
- 1 tablespoon almond milk (for icing)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line an 8ร8 inch baking dish with parchment paper.
- Combine almond flour, coconut flour, sweetener, salt, and baking powder in a large bowl.
- Add softened butter, egg, and vanilla extract; mix until a dough forms.
- Divide the dough in half and press one half into the bottom of the prepared baking dish.
- Spread the sugar-free strawberry jam over the crust.
- Roll out the second half of the dough and place it over the jam, sealing the edges.
- Bake for 20-25 minutes or until golden brown.
- Let cool, then mix powdered sweetener and almond milk to create icing; drizzle over the top.
- Cut into bars and serve.
Notes
For extra sweetness, adjust the icing by adding more powdered sweetener if needed.
