A delicious and easy-to-make dish combining tender chicken with fresh tomatoes, aromatic basil, and savory pesto.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1/2 cup fresh basil, chopped
  • 1/2 cup pesto sauce
  • 1/2 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC).
  2. Season chicken breasts with salt and pepper, then place in a baking dish.
  3. Combine diced tomatoes, basil, and half of the pesto sauce in a bowl.
  4. Top each chicken breast with the tomato mixture.
  5. Drizzle a little olive oil over the top and bake for 25-30 minutes, until the chicken is cooked through.
  6. Remove from the oven and sprinkle with mozzarella cheese and the remaining pesto sauce.
  7. Return to the oven for an additional 5-7 minutes, until the cheese is melted.
  8. Serve warm, garnished with extra basil if desired.

Notes

For best flavors, use fresh basil and high-quality pesto. Consider marinating the chicken in pesto before cooking.
