- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, diced
- 1/2 cup fresh basil, chopped
- 1/2 cup pesto sauce
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- Season chicken breasts with salt and pepper, then place in a baking dish.
- Combine diced tomatoes, basil, and half of the pesto sauce in a bowl.
- Top each chicken breast with the tomato mixture.
- Drizzle a little olive oil over the top and bake for 25-30 minutes, until the chicken is cooked through.
- Remove from the oven and sprinkle with mozzarella cheese and the remaining pesto sauce.
- Return to the oven for an additional 5-7 minutes, until the cheese is melted.
- Serve warm, garnished with extra basil if desired.
Notes
For best flavors, use fresh basil and high-quality pesto. Consider marinating the chicken in pesto before cooking.
